Food additive E524, which corresponds to sodium hydroxide (caustic soda), is used primarily for pH regulation in the food industry. It is used to adjust the acidity or alkalinity of certain foods, and may be used in the production of processed products such as black olives or for vegetable pickling. Its use is strictly controlled to ensure food safety.
