Potassium Sorbate, or the potassium salt of sorbic acid (E200), is known for its use as a food additive under the code E202. It is primarily used as a preservative in food. It has excellent fungistatic properties, inhibiting the proliferation of yeasts, molds and it is an odorless and tasteless salt. It is found naturally in rowan berries, but this grade is of synthetic origin, produced by the synthesis of sorbic acid and potassium hydroxide. USAGE TIPS

The effectiveness of Potassium Sorbate is optimal at pH values below 6.5. The higher the pH, the lower the effectiveness of this preservative.

The typical dosage for food applications is 0.25 g to 1 g per 1 kg. Do not use in yeast-leavened bakery products. For fruit beverages and wine, the required quantity depends on the alcohol content (12% to 14% alcohol would require 0.07 g per liter). A lower alcohol content would require more.

In cosmetics, potassium sorbate is used to preserve formulas that contain an aqueous phase. As a preservative alone, its concentration is between 0.15 and 0.3%. The regulatory maximum is 0.6%. If combined with other preservatives, it is concentrated at 0.1 to 0.2%. Potassium sorbate is often associated with sodium benzoate and is used primarily in formulas with a pH between 2.0 and 6.5.

The acceptable daily intake for potassium sorbate is 3 mg per kilogram of body weight per day. Do not combine with nitrites.
